Homemade Dukkah

Dukkah (a.k.a. dukka) is an Egyptian spice blend comprising of toasted nuts, seeds and spices. Sprinkle over vegetables, salads, pasta dishes, pizza or your favourite burger. This recipe makes approximately 2 cups.

1/2 a cup of roasted hazelnuts
1/3 of a cup pistachio nuts (shelled)
1/2 a cup of roasted almonds
1/4 of a cup of walnuts
1/4 of a cup of toasted sesame seeds
4 teaspoons of ground coriander
4 teaspoons of dried thyme
5 teapsoons of ground cumin
2 teaspoons of freshly ground black pepper
2 teaspoons of sea salt
(You can add more spice if you require, some people also like adding paprika, chilli, cinnamon or allspice)

Add the nuts to a frypan on medium heat and roast until slightly brown in colour.
 Add all ingredients to a spice blender and blend until smooth. Or crush in a mortar and pestle.
3. Store in a clean tightly sealed jar, away from sunlight, for 4+ months.
